Homemade BBQ Sauce...

Dear BBQ Friend:

Here's the BBQ Sauce recipe that I tried out in a few BBQ contests. I wanted something unique because I think the judges are getting tired of the same old thing every weekend. I also wanted to keep the basic theme that the judges "seem" to like... sweet, tangy, with a little kick. Note: the recipe in the book seems to be the best because it won 8 grands and this one didn't.

  • 3 cans Hunt's crushed tomatos (28 oz)
  • 2 cups apple cider vinegar
  • 2 cups honey
  • 1/2 cup sea salt
  • 1 small onion diced
  • 1 head of garlic peeled & diced
  • 1 pablano pepper diced
  • 1 jalapeno pepper diced (leave seeds in for extra kick)
  • 1 tbsp pasilla powder if you can find it
  • 1 cup dark brown sugar
  • 1 cup dark agave nectar
  • 1 cup maple syrup
  • 1 tbsp mixed peppercorns, ground
  • 1 tbsp celery seed
  • 1 tbsp paprika
  • 1 tbsp cumin
  • 1 tbsp cinnamon
  • 1 tbsp black pepper
  • 1 tbsp rosemary
  • zest of one lime & one lemon
  • juice from one lime and one lemon
  • 1 bottle 16 oz balsamic vinegar (I use Pompeian since it seems to be real balsamic and not some kind of imitation)
  • 4 tbsp hickory liquid smoke
  • (after it is simmering, thicken it up a bit with 3 tbsp cornstarch dissolved in a little water)

Directions: mix all ingredients and simmer on low for 1 hour. After about 45 minutes, add in the cornstarch mixture while stirring. Depending on how you like it, run it through a food mill to remove pepper skins and other solids. You can also use a "boat motor" hand mixer to chop up some of the ingredients before running it through the food mill. You can also use a colander or coarse strainer. Or not strain it at all.

Yield: About a gallon give or take a little.
