Dear BBQ Friend:
The Lang 60 may very well be one of the best selling barbecue pits of all time. As they say... "It's often imitated but never duplicated". Lang is the originator of the reverse flow smoker design for offset
barbecue smokers. The reverse flow with the baffle plate is absolutely necessary in my opinion to prevent extreme temperature differences inside your smoker's cooking chamber. They have many models to choose from including a smaller
patio model for back yarders, but the Lang 60 has got to be the most popular.
When The Chatham Artillery BBQ Team first started out, we used a Lang 60. We eventually switched to pellet smokers for the convenience, but I have always said that you can cook better BBQ on a stick burner than with a pellet smoker
"IF" you know what you are doing. The reason I say "IF" is because stick burners are much harder to use. With a pellet smoker, you just press a few buttons and everything is taken care of for you. There's no wood chopping, fire
tending, or staying up all night adjusting your pit temperature. The pellet smoker takes care of all that for you. Some people enjoy chopping wood, so they don't mind. Me? I prefer to get a little sleep at night which gives me
a big advantage at a BBQ competition. The tradeoff is you can almost never get that stick burner smoke quality out of a pellet smoker. Again, that is if you manage to keep a proper fire going all night. And most people do not know
how to properly keep a fire going in a stick burner, so most of the time a stick burner will not produce better BBQ than a pellet smoker. Just watch this two part video and see for yourself. Please excuse all the ummms and uhhhhs-
