Dear BBQ Friend:
Here's a great recipe for when you have that grill lit up.
Paleo Note: If you are on a Paleo or Keto diet, just modify it a little. Maybe throw out the bread altogether, cut the peaches into halves instead of slices, grill them up, and top with your favorite paleo friendly cheese. If you are hardcore paleo and can't tolerate the lactose in cheese, just leave the cheese off too. They'll still be delicious!
1. Slice baguette into ½-inch slices at a diagonal. Brush both sides with olive oil and grill until lightly toasted, not burnt. Set aside.
2. Brush both sides of peach slices with olive oil. Grill about 3-4 minutes on each side.
3. In a small bowl, using a hand mixer, whip together cream cheese, goat cheese and basil.
4. Spread a little goat cheese mixture on each bread slice and top with a peach wedge. Place on serving platter and drizzle generously with honey.
