Thai Ribs

Ingredients
- 6 cloves garlic minced
- 2 tablespoons fresh ginger minced
- 8 Serrano peppers minced with seeds
- 4 small green onions minced
- 1/4 cup cilantro minced
- 1 tablespoon grated lime zest
- juice of 3 limes
- 1 cup hoisin sauce
- 1/2 cup rice wine vinegar
- 1/4 cup fish sauce
- 1/4 cup honey
- 2 tablespoons soy sauce
- 2 tablespoons peanut oil
Instructions
- If you lightly chop all of this, a good blender can take care of the rest. Will work for 2 - 3 slabs of baby backs. Marinate with some of the sauce for 4 - 8 hours. Reserve remainder of sauce for dipping later. I smoke the ribs on a gas grill with hickory at about 250 for 5 hours. Basting occasionally with some of the reserve sauce.
