Ingredients
  • 6 cloves garlic minced
  • 2 tablespoons fresh ginger minced
  • 8 Serrano peppers minced with seeds
  • 4 small green onions minced
  • 1/4 cup cilantro minced
  • 1 tablespoon grated lime zest
  • juice of 3 limes
  • 1 cup hoisin sauce
  • 1/2 cup rice wine vinegar
  • 1/4 cup fish sauce
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons peanut oil
Instructions
  1. If you lightly chop all of this, a good blender can take care of the rest. Will work for 2 - 3 slabs of baby backs. Marinate with some of the sauce for 4 - 8 hours. Reserve remainder of sauce for dipping later. I smoke the ribs on a gas grill with hickory at about 250 for 5 hours. Basting occasionally with some of the reserve sauce.
  2. These are pretty spicy and go great with Pad Thai.
